Why not have a cutting cake?

A cutting cake is a cake that is iced only on the top of the cake and not on the sides it therefore is not displayed but kept in the kitchen and cut up alongside your main wedding cake. This offers additional portions to make up any shortfall in portions needed. As this cake is not fully decorated it costs less and can make some significant savings on portion costs.

Some really large weddings may well require more than one cutting cake.
